By now we’re sure you all know our fabulous Food & Beverage Service Manager, Kris Bazys (aka the genius behind our cocktail menu), but we thought we’d pick his brains to help you get to know him that wee bit more!
Tell us about your role
I’m the Food & Beverage Service Manager at voco Grand Central Glasgow, which means I help look after all things food and drink – whether it’s the restaurant, bar or events!
My favourite place to be is behind the bar though, and I get given a lot of creative freedom when it comes to the cocktail menus. Designing the drinks menu is a real passion of mine, as well as training the staff and seeing their interpretations of them is so rewarding. And of course, being able to give everyone a great experience is something I really take pride in.
How long have you been a part of the team?
I’ve been with the hotel for just shy of three years – time flies when you’re having fun!
What’s the best thing about your job?
Firstly, my office is literally Champagne Central – I couldn’t think of a better environment to work in! No day is the same – it keeps things exciting and brings new challenges (which keep me on my toes!). But it also means I get to develop my skills at the same time.
Tell us a bit about where you’re from
I’m from Vilnius, which is the capital of Lithuania – a country with hot summers but even colder winters! I miss it a lot and I don’t get to go back as often as I’d like to.
Tell us a bit about your university degree
While I’ve been shaking up cocktails, I also studied for a BA in Economics, Mathematics and Statistics. And recently I graduated with a Masters in Actuarial Science – a very proud moment! My degrees don’t directly link to hospitality, but there are a lot of transferable skills that I’ve discovered over the years. Now I have my degrees behind me, I’m excited to be able to really dive into my role here.
What’s your all-time favourite item from the menu?
That’s easy—a Negroni—it’s a total classic that never goes out of fashion. It’s such a fantastic cocktail showcasing simplicity at its best. Plus it’s made from just three ingredients – it’s crazy! It’s an interesting drink as there are endless opportunities to add a twist to it.
What’s your go-to drink when you’re out?
Hmm… if not a Negroni you’ll catch me with a glass of Champagne in hand because “Champagne season is always open” (that’s a quote from the legendary Veuve Clicquot). Despite creating a cocktail menu bursting with colours and flavour, I’m quite a simple drinker (haha!).
If you could snap your fingers and become an expert in something, what would it be?
I’d love to be able to play a musical instrument – I think the piano would be so cool. I’m really not gifted when it comes to anything to do with music, so that would be a fun skill to have – I really admire people who can play instruments.
