In our latest meet the team blog, we’re catching up with Brodie Green. Brodie’s been with us at voco Grand Central Hotel for a few years now, but we super excited she’s just been promoted to Head of Food & Beverage – don’t forget to say congrats if you see her about!
Tell us a bit about where you’re from
I’m from East Kilbride, just outside Glasgow – a local lass!
Tell us about your role
I’m F&B Manager, which means I look after everything food and beverage in the hotel. That’s from breakfast to room service, Champagne Central and 400-people events – it’s quite a lot! I’m new into the role, so it’s very exciting, but I’ve been with the business for a few years – I started out as Restaurant Manager and then progressed to manage our Conference and Banqueting department, and now to all things food and beverage!
What’s your favourite thing about the job?
Cheesy to say, but for me it has to be the team – they make it very easy to come to work every day. Plus it’s the satisfaction that comes along with making our guests happy.
What do you love most about the hospitality industry?
I love that there’s room for everyone to be themselves – we have all walks of life, and people that may not usually cross paths. And I love creating a safe relaxing space for people to chill out and treat themselves away from the day-to-day stresses of life.
What’s the proudest moment of your career so far?
I’m really proud to be newly promoted, but re-building an incredible Conference and Banqueting team from scratch after the pandemic and seeing them all thrive makes me extremely proud!
What led this you to this career and why do you love it?
I started working behind a bar part time whilst I completed my degree (in environmental science – safe to say I went down a different route!) and just fell in love with the industry. In my first proper cocktail bartending job I was mentored so incredibly and really shown that this can be a career if you have the passion. It was just strength to strength from there!
What are three words your teammates would you use to describe you?
I had to ask for help on this one! Crazy, dedicated, trustworthy.
If you were stranded on a desert island, what three things would you want to have with you and why?
My favourite album, my favourite person and a bottle of tequila – then it’s more like a party!
If you could snap your fingers and become an expert in something, what would it be and why?
I would love to be an incredible chef – I like to cook but I’m not the best…
What’s one thing people don’t know about you?
A lot of my colleagues probably don’t know I actually lived in Australia for a couple of years in my early 20s.
What country is on your food and drink bucket list?
I’ve heard that the food and drink in Singapore is incredible, so maybe that’s next on the list!
What’s your go-to drink/dish when eating out?
I’m very partial to a Margarita. When it comes to food, any kind of tapas/sharing-style small plates – it saves me having to make a decision and I get to try a bit of everything!
And finally, what’s your favourite item from the Champagne Central menu?
Without doubt, it’s a Bloody Mary.
