During the festive period Executive Chef Zoltan Szabo has been hard at work with his team of elves (aka our lovely chefs!) and they’ve created the perfect festive afternoon tea which runs throughout December. We caught up with Zoltan to find out more about it, as well as what he loves about the festive season.
What’s on your Christmas afternoon tea this year?
We have delicious sandwiches filled with Scottish smoked salmon and roast turkey with a cranberry sauce. Next, there’s warm scones, and then plenty of festive treats such as a mini cinnamon sponge topped with vanilla cream, a Black Forest-inspired chocolate cone and a mini clementine tart. It’s perfectly with a coffee, or—since it’s the season to be jolly—a glass of fizz.
What are your favourite festive flavours and scents?
One scent I really love at this time of year is fresh pine. Although I also like cinnamon and mulled wine – we’re currently offering mulled wine and mince pies in the hotel lobby, so do come down and try some. And not forgetting all the flavours of a delicious traditional roast too.
Do you have any Christmas traditions?
In Hungary it’s tradition that on 5th December children polish their boots, leave them out for Saint Nicholas and anxiously wait to see if he has brought any gifts for them. I still embrace this tradition with my family to this day, and as I am always a good boy there are no disappointments! Also, at home every year we have duck for Christmas dinner, served with redcurrant-braised red cabbage, roasted winter vegetables and traditional duck fat roasties.
Can you give us any hints as to what to expect in 2020 for afternoon tea?
We’ve started to sketch out some ideas – nothing is finalised but we have some exciting ideas already that we’d love to bring to life. Once the festivities are over, we’ll focus on future plans, of course keeping it seasonal and traditional.
