For National Mojito Day we’re getting all fancy and adding some Champagne to this simple classic cocktail. Well, we are Champagne Central, after all!

You’ll need: collins glass, muddler, bar spoon
Ingredients
3 lime wedges
Small handful of mint leaves
25ml white rum
Juice of half a lime
1 tsp sugar syrup
Champagne
Garnish: mint sprig and lime wedge
Method
1. Muddle the lime wedges and mint together in a collins glass to release their flavour.
2. Add the rum, lime juice and sugar syrup (take a look at our recipe for sugar syrup below).
3. Fill the glass with crushed ice, then top with Champagne. Give the drink a gentle stir with a bar spoon to ensure the ingredients are combined.
4. Garnish with a sprig of mint and a lime wedge.
How to make your own sugar syrup
In a saucepan, dissolve 100g caster sugar and 50ml water over a low heat. Leave to cool and keep in the fridge (if you’re making lots of drinks, then scale up the recipe – just use half the amount of water to sugar).
If you don’t have time to make your own sugar syrup, then just add 1 tsp caster sugar to your drink – just make sure to stir really well, so that the sugar dissolves.
